Snack Attack!

     Do you ever get one of those overwhelming feelings where you just wanna try something new and BAKE?! Well, that's happened to me a few days ago and that is where these came from:

.....deadly, I know...Here, my friends is my version of the "Cinnamon Roll Cookie". I originally saw the idea off of Pinterest, along with many other tantalizing recipes. This is the original recipe: Cinnamon Roll Cookies this is off a blog and looks like she got the recipe from Betty Crocker. After I read the recipe I was inspired, to say the least, not only to make these but to "spruce" 'em up a bit! So, I broke out my handy dandy sugar cookie recipe to replace the store box mix. Not that there is anything wrong with that, it will definitely save time and will still be delicious. I just like to make what I can from scratch when I have that option, and I just so happened to have all the ingredients at home already. AND, so much cheaper.
     SO my trusty sugar cookie dough recipe can be found at: Chewy Sugar Cookies off of foodtv.com's website. I let the dough rest for about 30 minutes in the fridge so it wasn't so soft since I have to take my rolling pin to it. A little tip: I covered the work surface with plastic wrap with another layer on top so I didn't have to use any additional flour. Nothing stuck and it really helped with the rolling out of the dough and rolling into a log as well.

    Once rolled out about 1/4th inch thick like stated in the original cinnamon roll cookie recipe I did exactly like it says, brushed with melted butter and sprinkled it with half the cinnamon and sugar mix (I only made a 1/2 batch of these cookies).

     Then, I rolled it into a log and wrapped with plastic wrap. This was most definitely the hardest part. The dough gets very soft from being worked so much. So, just use the layer of plastic wrap on the bottom to help ya out!

 So, once you have it wrapped, place it in the freezer for about 30 minutes or so or just until it is firm. Next, take dough out of freezer and slice in 1/4 inch slices and place on ungreased cookie sheet.

These had to bake for about 9 minutes at 375 degrees. Place the cookies about 2 inches apart, these really puff up a lot!

     Let cookies cool completely. Now it's time for the glaze, oh yeah. I ended up making enough glaze for probably a full batch and used ALL of it. I did my own glaze: 1 1/2 Cups Powdered Sugar, 4 1/2 tsp water and 1 1/2 tsp vanilla extract. Mix together with a spoon and drizzle on the top of the cookies. Let set for about 30 minutes until the glaze hardens and you're done! Hubby went nuts over these! Hope you don't get too addicted (C:
